Chef Schuster has helped to bring Spanish cuisine to the forefront of the city’s dining scene with Canela’s assortment of entrees, tapas, raciones and specialty dishes, made with only the freshest imported Spanish and local ingredients. In addition to creating and maintaining a remarkable seasonal menu, Schuster frequently collaborates with other pros throughout the culinary industry to create limited edition specialty menus designed to highlight specific flavors and ingredients. He recently partnered with Chef Jack Mancino of Hudson Valley Foie Gras to create a decedent one-day only tasting menu of savory duck and foie gras recipe creations.

Chef Schuster and Mancino hit it off at a Golden Gate Restaurant Association event earlier this year and decided to join forces and bring Canela patrons the best that Hudson Valley farm has to offer. Dishes included Spanish Tortilla de Patata with Duck Sausage and Smoked Paprika Crème Angaise ALC and Seared Duck Breast with Spanish Piquillo, Chocolate Mole, Cinnamon-Saffron Rice and Foie Aoli ALC. It was a decadent dining experience that showcased the genius that is created by uniting the freshest, high quality ingredients with the creative zest that both chefs are known for.
